The only time I soak rabbit in salt water is when I'm cooking hare. Hare tends to have a stronger and little gamer flesh. Cotton tails are milder and I don't soak. I use a pressure cooker also, works a lot faster.........dh

Does the cheese stay on the rabbit? I'd probably put it on after taking it out of the skillet?

I soak all small game in salt water at least overnight for a couple of reasons. Because I do not hang small game as I do deer the salt water draws the blood out and it also adds in stopping the growing of pathogenic bacteria should there be any on the carcasses. As careful as I am, crap happens and that is the vehicle upon which harmful bacteria are transmitted to the edible tissues, commonly called contamination. Man has understood the preservation properties of salt and sugar for years and my use of it has not a thing to do with trying to draw out a gamey taste.
