Don't Forget the Biskits!

beagles103 suggested we have a forum for recipes. I thought it was a good idea but we have so many forums right now it's getting hard to find things. So, I'll sticky this post as a recipe thread, and if it gets a lot of response then we may indeed make a whole separate forum.

Those of you who subscribed to The American Beagler when I first started it will remember the monthly recipe cards in the magazine called "Don't Forget the Biskits." I titled this thread the same, but the better thing about this is you can post pictures of your culinary creations - wild game dishes, or like my favorite summer squash/red tater/smoked sausage/parmesan concoction below:

No recipe for this really, you just cooked it all up and season it, but I'll list it out just the same.

2 small zucchini squash
2 yellow squash
Some new red potatoes (leave skin on)
1 lb smoked sausage or kielbasa
Crushed red peppers
Parmesan cheese

Cut all into bite-sized chunks. Brown sausage with a little oil in a non-stick skillet, then set aside. (leave the drippings in th pan) Place the potatoes in the pan, add a tiny bit of water, cover and cook covered until they are almost done. Add squash and add sausage back in, sprinkle with dried crushed red peppers (to your own hot meter) and cook over medium heat until vegetables are softened. Garnish the top with parmesan cheese. Serves about 3 people if they aren't big eaters. I would double the recipe to feed 4.

I tried that dish, and I must say, the best way that I have eaten Yellow squash. my wife will not eat squash until she tried this dish. I have made it three times since (by her request)

Bev, I really like this idea of a new forum just for recipes and things people have cooked, I am not good at trying new things but the recipe you put up I am cooking it for dinner tomorrow.


hey Josh might get a good meal once and awhile :lol:

don't over cook ribs or steak
on a steak if you have to use steak sauce you did something wrong
on frying fish don't start with grease to low will be soggy fillets

On my recent trip to Canada, I made lasagna dinner for Dan and his neighbors and nearby friends. It's become somewhat of a tradition. I thought y'all might like to see what my lasagna looks like. It turned out pretty good, and the pan weighed about ten pounds, lol:

I wish I had taken a picture of the salad I made to go with it. I'm all about the "presentation." It was romaine, iceberg lettuces, chopped tomoatoes, sliced black olives, banana pepper rings, piled with thin-sliced red onions, and coarsely shredded parmesan cheese.

Instead of Biskits, we had garlic bread, of course. And plenty of red wine. ;)

Daves rabbit hunter special.
For the rabbit hunters, how about rabbit for breakfast.
The one meal you will enjoy preparing.
Cut all meat off bone of rabbits
Grind rabbit into burger.
Grind beef suit and freez.
Mix sasage seasoning 1 table spoon per rabbit.
Add hot pepper (your choice) 1 small per rabbit.
Add ground suit loosely 1 to 2 tlb. spoons per rabbit.
Mix litly so you can see fat.
Fri on med. heat till light brown.
serve with eggs or what ever you want.

I fix about ten pounds of this every winter. I use hog jowl, or when I find boston butts on sale, I buy several and add it to the mix. I usually trim the fat off of the butts when I am BBQing in the summer and save it for sausage. You need to make sure if you add cured jowl, you cut back on the salt, and trim the rind off. (lesson learned from experience.) I use this reciepe for all them old tough swampers that we harvest. make you smack your momma!!! :chef: :nod:

I cooked some rabbit nuggets. I cut the meat off the bone and cut it into about one inch pieces. I then put them in buttermilk and egg, and put them into a ziplock bag of 50% 50% corn meal and flour salt and pepper. Then just fried them up into nuggets that are better than McDonalds. My 7 year old and almost 2 year old ate them till they were almost sick. they were so good. Fried is still my favorite way to eat the Mighty Rabbit.

My wife usually just bakes a cut up rabbit in the oven at 350 for and hour-and-a-half or so, then browns in in a cast iron skillet. Does squirrel the same, just bakes it longer.
